Thisstandardappliestomeatcarcasesand/orassociatedcutsmarketedasfitforhumanconsumption．Thepur-poseofthisdocumentistoprovideavarietyofoptionstopurchasersformeathandling，packingandpackaging，andconformityassessmentwhichconformstogoodcommercialpracticeformeatandmeatproductsintendedtobesoldininternationaltrade．Contractorsareresponsiblefordeliveringproductsthatcomplywithallcontractualandspecifica-tionrequirementsandareadvisedtosetupaqualitycontrolsystemdesignedtoassurecompliance.
Theatandardmaycontainreferencestootherintemationalagreements，standardsandcodesofpracticewhichhavetheobjectiveofmaintainingthequalityafterdispatchandofprovidingguidancetogovernmentsoncertainaspectsoffoodhygiene，labellingandothermatterswhichfalloutsidethescopeofthisstandard．CodexAlimentariusCommis-sionStandards，Guidelines，andCodesofPracticeshouldbeconsultedasthecompetentinternationalrefercncecon-cerninghealthandsanitationrequirements．
Allmeatandmeatproductswilloriginatefromanimalsslaughteredinestablishmentsregularlyoperatedundertheapplicableregulationspertainingtofoodsafetyandinspection.
